Born of immigrant parents, Oleg grew up in Harlem, New York. After a brief interest in art during high school, Stavrowsky was called to serve in World War II and later received an honorable discharge as a staff sergeant. Following that, he gained a post as a technical illustrator for McDonnell Aircraft in St. Louis and expanded his oeuvre to commercial fashion depictions. After a visit to Oklahoma City and the Cowboy Hall of Fame, Stavrowsky focused his work on western themes. The illustrations of cowboys and horses became his best known works and are highly collected.
